Today Lyssy woke up asking for pancakes. I just couldn't pull it together in order to make it for breakfast. So I decided to make it for Muffin Tin Monday since I THOUGHT there was no theme this week, but I am wrong the theme is actually Patriotic (maybe I'll do that tomorrow).
I rememberd several muffin tinners making mini pancakes to put in their tins, but the more I thought about it the more that seemed like a real pain to get the pancakes that small. So I asked Lyssy if we could have waffles instead. Thankfully, she said yes.
We had waffles, leftover egg casserole, syrup, blueberries, and orange juice.

I lve the idea of making the waffles into dippable strips for the syrup. I think my kidlets would love this...and hey, there is a dips and sauces theme coming up in july!
I have only done two muffin tin meals so far and haven't ventured into breakfast yet...I really only "cook" breakfast for the kids when we run out of easier options lol. But that looks like a cute and easy one that I will remember to try. :)
Yummy! Those blueberries make it patriotic in my opinion...
